Khanom Tom (Boiled Rice Balls) – Thai Dessert

Khanom Tom (Boiled Rice Balls) – Thai Dessert… Base on evidence, this sweet was introduced into Sukhothai period, along with Brahmanism and belief in the gods. Knead glutinous rice flour into one mass of dough. (If pandanus juice is used, the finished product will have a savory aroma.) Roll the dough into small balls, flatten each and fill with coconut filling. Wrap the dough into one complete balls. Toss the balls in streamed grated coconut to give white fluffy balls. For the filling, mix grated coconut and palm sugar and cook over medium heat. Stir constantly to thick consistency. For red balls, use the pink-brown filling to coat the ball, instead of streamed granted coconut.
